I bet most people don’t know you can eat raw mushrooms! They taste great, and eating them raw gives you a whole new experience; they’re a completely different texture and taste slightly different than when cooked.
I made this raw button mushroom salad the other day to go with a meal of baked chicken breasts and potatoes, it went down a treat! It’s super simple and can be made in minutes, so try it out as an alternative to a side salad, you won’t regret it!
Here’s what you’ll need:
- 6 button mushrooms, thoroughly washed
- Juice of 1 lemon
- 2 garlic cloves
- Handful of mint leaves
- Salt & pepper to taste
This is a super easy recipe, with no cooking involved. Firstly, make sure you wash those mushrooms well. A lot of people will tell you not to wash mushrooms as they get a bit slimy, but as you’re eating them raw here I wouldn’t recommend not washing them. And because this salad is to be eaten straight away, you won’t get slimy mushrooms. After washing, slice your mushrooms thinly.
Next, layer the sliced mushrooms on a serving dish and season with salt and pepper. Using a garlic press, add the 2 pressed cloves of garlic and then cover the entire salad with the lemon juice. The acid from the lemon juice will kind of cook the mushrooms a bit (almost like a Carpaccio), so they’re not as tough and all the flavour soaks in.
Chop the mint leaves and sprinkle on top, and you’re ready to eat this healthy and delicious raw mushroom salad!
