Recipe: Fried Chorizo with Tomato and Onion Sauce

fried chorizo with tomato and onion sauceA good Spanish tapas meal will consist of a wide variety of different small dishes of food, ranging from potato tortilla, to meat based, fish based, or cheese based dishes, to be eaten both hot and cold. This fried chorizo with a chunky tomato sauce is a great dish to make if you’re having a Spanish themed dinner party or just want to indulge in a few Spanish style tapas. I’ve already shown you how to make Spanish Tortilla, and this will sit very well alongside that dish. 

The recipe is really easy and quick to make, just like good authentic tapas should be. 

So here’s what you’ll need:

  • 4 small cooking chorizos, sliced (approx. 200gr)
  • 1 can chopped tomatoes 
  • 1 large onion, chopped
  • 1 garlic clove, crushed
  • salt & pepper to taste 
  • Tabasco sauce of dried chili flakes (optional)


Add your chorizo slices to a wide pan to start frying. There is no need to add oil to the pan as the chorizo will release oil as soon as it starts to cook. Keep turning the slices until they are nicely browned and crispy on the outside. Add the chopped onion and gently cook until soft. Add the crushed garlic clove, cook for about 2 minutes, then add the chopped tomatoes. Season with salt and pepper to taste.

Cover the pan and leave to simmer for about 10-15 minutes on a low heat. Enjoy this hot with some crusty bread and the rest of your tapas concoctions.
