So, you’ve just made a wonderful fresh tomato and basil bruschetta, but you’re now wondering what to do with the discarded bits of tomato that you didn’t use. I always wondered the same thing and felt there must be something I could do with them other than throw them away. So I came up with this wonderfully fragrant, tasty and healthy fresh tomato dip. It goes wonderfully spread onto bread and topped with the bruschetta topping, or simply as a dipping sauce.
Here’s what you’ll need:
- the unused bits of tomato from the bruschetta recipe
- 2 medium sized garlic gloves
- bunch of fresh basil leaves
- 2 tablespoons olive oil
- salt & pepper to taste
- (optional) half a small onion
Place all the ingredients into a small mixing bowl and, using a hand-blender, blend until completely smooth. Taste and ensure there is enough seasoning. Place in a small serving bowl and leave in the fridge until serving. Just before serving, drizzle the bowl with some fresh olive oil and enjoy!
