This banana bread is a winner at my house. It’s so easy to make, always turns out really tasty and is perfect for breakfast or an afternoon snack.
It’s not the healthiest of cakes, but at the same time it’s not as fattening as some other cakes I’ve made in the past! So try it out and indulge in a really tasty, super easy banana bread!
What you’ll need:
- 220g plain flour
- 75g caster sugar
- 80g brown sugar
- 11/2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 2 medium eggs
- 125 ml vegetable oil
- 3 mashed bananas
Combine the flour, baking powder, caste sugar, brown sugar, teaspoon and vanilla extract in a bowl. Make a well in the centre and add the eggs, vegetable oil and mashed bananas. Mix well; I use an electric mixer for this to make sure everything is thoroughly combined, but it’s not necessary.
Pour the mixture into a greased loaf tin, approx 20cm x 10cm x10cm (approx. 1.3 litre capacity).
As an extra touch, I sprinkle the top with brown sugar, which will form a nice crispy crust once cooked. Again, this is not necessary but makes for a nice detail.
Bake in the oven at 140 degrees Celsius for about 60 minutes or until a skewer comes out clean.
