Don’t they look pretty! The photo above shows the banana and apple sauce muffins next to some strawberry muffins I baked on Sunday!
No matter how much I try, I always end up with horrible brown bananas, even though I buy them while they’re still green to avoid this problem. However, it’s always a good excuse to make banana bread, where the more ripe the banana, the better it tastes! I’ve previously shared a great easy recipe for banana bread, but there’s so much more you can make.
This is another super easy recipe, using ripe bananas and bramley apple sauce, which you can find in pretty much any supermarket. It takes about 15 minutes to prepare, 20 minutes to cook and makes almost no mess! I originally found this recipe on the From Away blog, but I added a few of my own touches like less sugar, more apple sauce and a touch of cinammon. I also added some oil as the first time I made this the muffins were way too sticky. For a bit of texture I like to sprinkle some brown sugar on top just before baking, which results in a really crispy top.
Here’s what you’ll need:
- 2 ripe bananas
- 1/4 cup brown sugar (and extra for sprinkling)
- 1/2 cup apple sauce
- 1 cup flour
- 1/2 tablespoon baking powder
- 1 tablespoon baking soda
- 1 teaspoon cinammon
- 1 teaspoon vanilla extract
- 1 egg
- 2 teaspoons vegetable oil
Pre-heat the oven to 180 degrees Celsius. Start by mashing the bananas until liquid, then add all the other ingredients. Spoon into prepared muffin cases and sprinkle with brown sugar on top. Bake in the oven for 20 minutes until golden brown- couldn’t be easier!
