Mexican Salad with Avocado, Coriander & Lime Dressing

mexican-style-saladIt’s not summer anymore, and the weather is definitely not hot anymore, but every so often I still crave a really refreshing and colourful salad. There’s a Mexican style salad that I absolutely adore at The Cheesecake Factory called the ‘grilled chicken tostada salad‘, which is made up of huge corn tortillas topped with garlicky chicken breast, black beans, fresh corn, avocado cream, plenty of shredded lettuce, and lots of other colourful and tasty ingredients. It’s my absolute favourite thing on their menu. I wanted to create a version of this that I could enjoy at home, seeing as we’re not lucky enough to have a Cheesecake Factory restaurant here in the UK. This salad is packed full of flavour, it’s easy to make, and can accompany pretty much any meal. I ate this with some nachos and a grilled chicken breast, delicious!

I wanted to give it a really zingy and refreshing salad dressing, so experimented with avocado, lime and coriander and created a creamy dressing that tastes great and is also perfect for dipping your tortilla chips into!

mexican-style-saladWhat you’ll need for the salad:

  • 1 large avocado
  • 1 can sweetcorn
  • 1 can pinto beans or black beans
  • 1 red bell pepper
  • half a cucumber
  • 1 white onion
  • a handful of cherry tomatoes
  • lemon juice

It’s really simple, you add the ingredients above into a bowl, in the quantities that you desire. Try to chop them into similar sized pieces, and then drizzle with lemon juice so that the avocado doesn’t start to brown. Now it’s time to make the delicious dressing.

  • half a large avocado
  • juice from 2 limes
  • 4 tablespoons natural or Greek yoghurt
  • large bunch of coriander, including the stalks
  • salt & pepper to taste
  • 1 tablespoon rice wine vinegar
  • 1 garlic clove

Making this is easy, all you need to do is add the ingredients above into a blender and mix until you have a creamy consistency. Taste it and add more lime juice if it’s not zingy enough, or more yoghurt if it’s too zingy! Keep tasting it until you’re happy with it- I like mine super zingy but I know that’s not to everyone’s taste.

Next, drizzle the dressing over the salad, accompany this with a grilled chicken breast and some tortilla chips.
